The problem with that theory is twofold. First, at the level he's playing, he's really in a race to take money off this guy. Because the other players at the table are good enough to play the same strategy. That's the main problem. Sure, you can wait for a monster, but then you have to hope you hit yours before 5 or 6 other guys hit theirs. In my book, you get into as many hands as you can against the guy, especially with position. You have to be able to outplay him post flop, and it isn't as easy when you don't have a monster, but the money is there if you can pull it off.
Second, your monster is likely to be just one overpair. That's a good way to go bust playing against a guy who plays any 2, since you will never see his two pair coming.
Beyond that, how much more of a monster do you need then sevens full?

Hand 1 I personally reraise his $20 bet on the flop, even though I know he's a junk artist. There's a great chance that he either grabbed a pair or a gutty draw, and he's not too likely to get away. Other than that I think you got your money.
Hand 2 I make a weak looking river bet, since you are OOP. Bet something really sick looking, like $40 into it, try to make him think you aren't in love with your hand...you're trying to rep something like KJ...you probably get nothing, but maybe he decides he's going to try to take you off it.
Mostly though I think you got what you were getting.

There were some large stacks gladly paying off any small stacks at the table so I decided to shorty buy (normally never do this, but thought it was a smart plan here). There was one crazy LAG, that this question refers to.
First a little backround on him. He double me up on the second hand after he pushed me all in with K7 on J-10-2 board (i had AJ) so I know hes not afraid to bluff. He plays a bit like a crappy version of SpiritRock (bets 400 into 40 pot...) and I got into 2 hands with him where I am not sure how to get paid off.
1) I raise to 12 utg (2-4nl) with AA and hes the only caller. Flop is Q-J-2 rainbow. Normally ill make a large bet here to get and dangerous hands out. But against this player I check called a 20 dollar bet. River was a 10, which is awful and I check call a 30 bet. River is 2, I check he bets 30, I raise to 60 and he calls with J-9.
