The percentages don't add up simply because percentages don't add up.
eg.
If you have $100 wagers on BJ and pay out $100 then you've paid out 100%
In the same time period you might have $1000 wagers on slots and pay out $500, therefore a 50% payout ratio.
(100%+50%)/2 = 75% is wrong
(100/(100+1000))*(100+500) = 54.55% is correct
As for the ariance, casinos win and lose. A month time period is not long enough to get a balanced percentage. If you have percentages covering a year then you would see more balance.
