I record every episode of "High Stakes Poker" and I've always seen them play only No-Limit Texas Hold 'Em. 2 cards per player. Then 3 cards face up on the board plus 1 & 1. A round of betting at each step. If all but one player folds before any or all the board cards come, he takes the pot. Sometimes they'll double deal the board by agreement, but that's rare.
