I personally almost never play less than 4. sometimes 5 or six, but the overlap kills me and i start making mistakes.

when i started multitabling, it killed my roll and took insane concentration. now i get bored if i play less than 4.

it all depends on the game though;
limit omaha- as many as i can open, if there's that many good games.
PLO- 4 max
limit holdem- only 1 (this is by far my worst game, and i open some limit omaha tables too)
NL holdem- depends on the stakes, 10 or 25$ buy, bring em on! 50 or 100$ buy, usually two (+2 lomit omaha8 tables)
Stud- one (gotta pay attn to those dead cards, cource i add limit omaha8 tables, too)

basicly, i usually concentrate on 1 or 2 games, then fill up on omaha. any monitor with 1600x1200 can handle this, and i may buy another soon.

i have heard tell of one dude playing as many as 14 or 16 limit .50/1 and 1/2 omaha8 tables no joke, and i beleive it's possible and profitable. and another very credible player says he plays SIX TABLES OF 6MAX 15/30 HOLDEM. OMFG! that is total INSANITY. and he wins...
he is an online superhero.

what is it about omaha and omaha8? until you get past 1/2, you just nut peddle, and the H/Hr id usually around 30-40 per table (very slow) it also builds pots and rake like crazy, the avarage flop% is around 60%, great for bonus clearing.

right now, for example, i'm playing four, and typing, and watching the simpsons.
